Slow Cooker Recipe

Today I made a somewhat Curried Chicken and served it over rice. It was yummy, though a bit spicy for my kids, but they ate it and drank about a gallon of water alongside! ( One way to get them to drink more water...)

Here is the recipe:

Ingredients:
One onion, sliced
One green bell pepper, sliced
5 medium sized carrots sliced
1 pound of boneless, skinless chicken thighs, cut into bite size pieces
1 can of Rotel
1 teaspoon of ground ginger

Mix the Rotel and ginger together, then place all these ingredients in order and cook on high for 2-4 hours or low for 5-6.

Then mix 2 tablespoons of sugar, 1 teaspoon of dried cilantro, 1 teaspoon of curry powder, and about a teaspoon of kosher salt and add that to the slow cooker, allow to cook a few more minutes and then serve over rice.

If you want thick sauce you can always mix a couple of tablespoons of cornstarch with about a half of cup of water and add it to the slow cooker and cook on high until thickened.

My favorite wheat bread recipe

Time to Bake!

1 1/2 cup warm water ,
1 1/2 cup warm (as above) milk
1/2 cup honey
2 tsp yeast
Add 5 and 2/3 cup flour
7 tsp vital wheat gluten
1-1/2 tsp kosher salt

Mix all the ingredients until combined and sticky and then place in a warm place for two hours.

Divide the dough into two medium sized greased bread pans and let rise about 45 minutes.

Bake at 350 degrees for 50 minutes.

Great results every time!

Psalm 119

I have been studying Psalm 119 for the past 6 weeks. At the end of this very long chapter, the psalmist says how he longs for God's salvation. It is amazing the faith and stability of the psalmist. Even though he is fallible and makes mistakes, he longs for the coming Messiah to come and fulfill the promise of God. How diligent he must have been!

I think of all the times when I just want to give up and and throw in the towel. Let the kids go, the laundry go, let the house go, not cook (which is something I really enjoy!). How little diligence I show in the day to day challenges. Yet these Old Testament Saints show real diligence, thoroughness, and a forward looking sense of hope.

It is so nice to be reminded that life is not about the here and now, but about eternity. So, after days/weeks of study, the truth that grabbed my attention this week is to regain my forward looking sense of hope that upheld the psalmist of 119 and all the Old Testament Saints. In addition, we have the promised fulfilled in Christ. There is no excuse, we know of God's faithfulness and ability to fulfil His plan! May we use this knowledge, by the power of the Holy Spirit, to keep our ways stable, not be double-minded, and to look forward to Jesus' coming with great affection and longing, and in that have true JOY!

May the Joy of the Lord be your strength! Nehemiah 8:10
