Slow Cooker Recipe

Today I made a somewhat Curried Chicken and served it over rice. It was yummy, though a bit spicy for my kids, but they ate it and drank about a gallon of water alongside! ( One way to get them to drink more water...)

Here is the recipe:

Ingredients:
One onion, sliced
One green bell pepper, sliced
5 medium sized carrots sliced
1 pound of boneless, skinless chicken thighs, cut into bite size pieces
1 can of Rotel
1 teaspoon of ground ginger

Mix the Rotel and ginger together, then place all these ingredients in order and cook on high for 2-4 hours or low for 5-6.

Then mix 2 tablespoons of sugar, 1 teaspoon of dried cilantro, 1 teaspoon of curry powder, and about a teaspoon of kosher salt and add that to the slow cooker, allow to cook a few more minutes and then serve over rice.

If you want thick sauce you can always mix a couple of tablespoons of cornstarch with about a half of cup of water and add it to the slow cooker and cook on high until thickened.
